Defining these zones before construction allows each partition to receive materials appropriate to its actual environment instead of unnecessarily specifying one assembly throughout the restaurant.
Restaurant walls near preparation and washing areas may be wiped or washed far more frequently than conventional commercial interiors. Gypsum locations are planned around where washable finishes will begin and end so vulnerable paper-faced surfaces are not left within repeatedly wetted zones. Wall geometry should also minimize awkward ledges and unfinished transitions where residue can accumulate or cleaning becomes difficult.
Service corridors, preparation areas and back-of-house passages can expose partitions to carts, bins and repeated staff traffic. Drywall assemblies can be planned with more durable facing materials or protective finishes at these locations while standard gypsum remains in lower-contact areas. Product limitations still matter because moisture resistance does not make gypsum board a substitute for a waterproof wall assembly in persistently wet locations.

The substrate beneath the panels must be sufficiently flat, stable and compatible with the specified adhesive system. Locations subjected to more direct moisture may require cement-based or other water-resistant panel products rather than paper-faced gypsum. These panels use inorganic materials that tolerate wet exposure differently from standard drywall and can provide an appropriate substrate for compatible finish systems. Selection depends on the actual moisture conditions and specified wall assembly rather than simply installing them throughout every kitchen wall.
Restaurant walls outside direct splash zones may use gypsum finished with coatings formulated for repeated cleaning. Higher-sheen or specialty washable coatings generally provide greater scrub resistance than conventional flat wall paint, but the coating manufacturer's substrate preparation requirements still govern the finished surface. Matching the coating to the cleaning frequency allows lower-exposure walls to remain serviceable without unnecessarily converting them to panelized wall systems.

Hand sinks, preparation sinks and other plumbed fixtures can require supply, drainage and vent lines to pass through restaurant partitions. Stud layouts and wall depths are coordinated with these service routes before boarding so pipes are not forced through unsuitable framing locations. Where fixtures attach to the wall, appropriate support can also be incorporated before the cavity becomes inaccessible.
Commercial kitchens can have ventilation components that intersect walls between cooking, preparation and adjoining spaces. Penetrations need accurately framed openings sized around the specified duct or sleeve rather than oversized field-cut holes through completed gypsum. Maintaining controlled edges also provides suitable surfaces for the required penetration detailing after mechanical work is installed.
Valves, cleanouts and other serviceable components located inside or behind kitchen walls should remain reachable after finishing. Where required, access-panel openings can be framed at known service locations and coordinated with the surrounding washable finish. Proper placement avoids later cutting through FRP, gypsum or another completed surface when maintenance is required.
Wall-mounted shelves, stainless-steel components and other kitchen accessories can create concentrated attachment loads along preparation walls. Specified wood or steel reinforcement can be installed between studs at the required elevations before gypsum or wall panels conceal the framing. This allows accessories to fasten into a dependable substrate without treating the drywall itself as the primary structural support.
It depends on the backsplash material and the wall's exposure to moisture, heat and cleaning. Standard gypsum may be acceptable in lower-exposure locations when the specified finish system permits it, while areas subject to repeated splashing may require a moisture-tolerant substrate. The requirements of the backsplash, adhesive and substrate manufacturers should be considered as one wall system.
Type X is gypsum board manufactured with enhanced fire-resistance characteristics and is commonly available in 15.9 mm (5/8 in.) thickness. It is used as a component of tested fire-resistance-rated assemblies where required by the building design. Installing Type X board by itself does not automatically make a restaurant partition fire rated; framing, fasteners, joints and penetrations must follow the specified assembly.
FRP systems typically use manufacturer-compatible division bars, inside corners, outside corners or termination mouldings to protect panel edges and create clean transitions. The exact trim profile depends on the panel system and adjoining finish. Establishing termination locations before finishing prevents exposed panel edges or irregular transitions between washable surfaces and painted gypsum.
Moisture resistance addresses how the board performs when exposed to elevated humidity or intermittent moisture, while mould-resistant products are manufactured with components intended to reduce susceptibility to mould growth. Some commercial gypsum products provide both characteristics, but neither makes a wall waterproof. Direct-wet environments still require materials and assemblies specifically approved for that exposure.
Small gaps around pipes, conduits and sleeves can create difficult-to-clean interfaces and allow moisture or contaminants to enter concealed wall cavities. Compatible sealants close these perimeter joints while accommodating minor movement between different materials. Where a penetration passes through a rated assembly, the required listed firestop system takes precedence over ordinary construction sealant.
